FROM THEN TO NOW

Long before Elliott’s Pizzeria, this building already had a story of its own. Dating back to the 1950s and later becoming Kross Roads Diner, it had been part of the community for generations.

By the end of 2018, Paige and Adam saw something in the old building worth saving.

They took on the project while expecting their son, Elliott. The building was barely standing. There were holes in the roof, rain poured inside, and years of work stood between what they saw and what they knew it could become.

But they believed in the vision, picked up the tools, and got to work.

THEN CAME ELLIOTT

In 2019, they welcomed the little boy who would eventually give the restaurant its name.

And Elliott really did grow up alongside the business.

During the remodel, he was right there with Mom and Dad, sometimes sitting in his car seat while the building was being transformed around him.

As Elliott grew, so did the dream.

A DREAM PUT ON PAUSE

Then came 2020.

COVID brought progress to a halt, and like so many other small business dreams during that time, Elliott’s was suddenly put on pause.

After already pouring so much work into the building, it was another major setback. But quitting wasn’t part of the plan.

When they were finally able to move forward again, they rolled up their sleeves and went back to work. Piece by piece and day by day, they continued rebuilding.

FINALLY, THE DOORS OPENED

In 2022, after years of work, setbacks, sweat, tears, and plenty of determination, Elliott’s Pizzeria finally opened its doors.

The little boy who had been there through the remodel now had a restaurant carrying his name, and the building that once needed so much love had a new chapter of its own.

AND THE STORY KEEPS GROWING

Today, Elliott’s is more than the original dream. It has grown into a place for family dinners, pizza nights, catering, celebrations, and nights out. With Elroy’s, live entertainment, and events added to the mix, there are even more reasons for people to gather. But underneath everything Elliott’s has become is the same story that started it all. A family. An old building. A big dream. And the determination to see it through.

And just like Elliott himself, they’re still growing.
